As a special education teacher, staying on top of your profession is key and critical to both your ultimate success and how your students learn. By asking about what you typically do to beef up your ongoing training and what resources and coursework you regularly access, the interviewer is looking to get a glimpse into how serious you are about your work, not just how prepared you are for it educationally. You can certainly go through and tally up all the resources you've turned to or participated in, but beyond just laundry listing them, go into the importance of each one and they've improved your performance as a teacher.
